Garlic Scapes Just Arrived!


A little emergency posting here as I just got some lovely garlic scapes (pictured above) from the farmers market and they are pretty much on their way out as they are usually only available in early summer (along with young green garlic) when they nip them off to allow the garlic bulbs to mature. They taste garlicky but crunchy and fresh like a pea married to a scallion. Hmmm.. I'm going to puree them raw, mixed with olive oil, white wine vinegar, salt and honey to marinate the goat leg I bought today for Fathers Day. I just tasted a piece of garlic scape with some sharp salty cheese, it was delicious. Enjoy.


(above) Here is the goat leg I marinated in pureed garlic scapes, olive oil, vinegar, honey, and salt. I would have shown you the finished version but we all ate it so quickly that I forgot to take a picture!

I cooked with garlic scapes just yesterday! Probably will be writing up a post about it for next week.
